Eat Happy: Fresh Raspberry Ice Cream Topping

aka “The best thing I’ve ever had on vanilla ice cream”
What I Used:
- 1 cup fresh raspberries
- 1/2 cup water
- 1/2 cup white wine
- 1 cup sugar
What I Did:
Step 1: Don’t Eat ‘Em All
It’s hard, but restrain yourself. Or just get a whole lot of extra, like I did.
Step 2: Heat It Up
The water, wine, sugar, and half a cup of the raspberries go into a sauce pan over low heat.
Mash the raspberries up a little with the whisk:
And make sure to stir the sugar up so it disolves:
Step 3: Let It Simmer
I let it simmer for about 25 minutes, but really I think it could have gone on for another 10-15 because it was still a little thin.
Try not to drink it directly out of the pot.
Step 4: Drool
Stir in the remaining half-cup of raspberries without breaking them:
Spoon over vanilla ice cream:
Step 5: Love Your Life
MmmmmMmmmm.
