Eat Happy: Roasted Pears with Blackberry Sauce

The photo –albeit a bit grainy– really does say it all.

What I Used:

  • 1 Pear
  • Handful of blackberries
  • Butter
  • Sugar
  • Vanilla
  • A smidge of white wine
  • Vanilla Icecream

What I Did:

Step 1: Pear Shaped is Good

I halved, cored, and drenched the pear in a combination of these ingredients:

Couple tablespoons of melted butter, some vanilla, and a squeeze of lemon juice. As far as I can tell there’s no science here.

After requisite drenching I sprinkled them with sugar and a pinch of cinnamon, then popped them in the oven at 375 or so.

Step 2: Saucy

The rest of the butter-vanilla-lemon mixture went into a sauce pan with some additional butter (because really, why not?)

Then a handful of blackberries go in and get all warm and smushy.

After a couple of minutes over medium-ish heat I mash them up a bit with whatever handy cooking utensil I can find.

A little more sugar, a splash of white wine, and some time alone over low heat to ponder the meaning of life, and the sauce is done.

Step 3: There are no words…

Hot roasted pear meats big scoop of vanilla bean icecream, a drizzle of blackberry sauce, and a couple of fresh berries on the side? I mean really? What else can one say…

    Oh Michelle, I am so not a kitchen Diva! Mostly I eat mac and cheese out of the box… every once in a while I get a wild hair about cooking something and about half of those recipes are good enough to share. Posting about it does encourage me to try new things (and THAT was good, because this recipe turned out awesome!)
